The combination of flavours with the soft, juicy potatoes and crispy chicken, served with the delicious sauce from the pan juices – out of this world! Personally, I love anything with lemon and a tang, but my husband is not always keen. However, he said this was one of the best meals he’s had!
I serve it with steamed broccoli or Asian greens and it adds to the flavour beautifully. You could add a simple salad to transform it into a summer dish.
The absolute best thing about this recipe is that it is so simple and easy to make! And, it never disappoints! So, that means the least amount of effort, with only 5 main ingredients and it’s done in an hour. My kids can’t get enough of this recipe either! They love it!

- 8 Chicken pieces organic, free range
- 8 mediume Potatoes organic, peeled and quartered
- 4 cloves Garlic minced
- 1 cup Lemon Juice freshly squeezed
- 1/2 cup Olive Oil organic, cold pressed
- Salt and Pepper to taste

Preheat oven to 180 deg C

Place potatoes and chicken in a large Pyrex Baking Dish. Season with Salt and Pepper

In a bowl, combine the olive oil, lemon juice and garlic

Pour over the potatoes and chicken

Cover the dish with foil

Bake for 30 minutes, remove foil and bake for a further 30 minutes so that the chicken and potatoes become a golden colour

Serve with steamed greens or a fresh salad
