Clean Healthy Granola means that this Granola is GLUTEN FREE, DAIRY FREE AND GRAIN FREE. It contains mostly nuts, which makes it quite high in calories but this means it fills you up quickly. You only need a small amount to feel satisfied. I love the chocolate flavour from the Raw Cacao Powder. I buy my nuts and Raw Cacao Powder from Poon Huat. You can find the link here. Once you’ve baked the Clean Healthy Granola let it cool and place it in a jar or container with a tight fitting lid and store it in a cool dry place. If you live in Singapore I would recommend you keep it in the fridge to keep it crisp and fresh.
I like to eat this granola with coconut yogurt. I love Raglan yogurt, which you can find in certain Cold Storage Stores, or you can find a variety of dairy free alternatives at Little Farms. They deliver too, which is great. Take a look here. You can also add some fresh or frozen berries to your yogurt and granola combination. Another great way to eat this Granola, is with a Chia Pudding. I make mine with Coconut Milk, Chia Seeds and a sprinkle of Vanilla Powder, which you can find on iHerb.

Gluten Free, Dairy Free, Sugar Free and Grain Free
- 1 Cup Hazelnuts no skins
- 1 Cup Slivered Almonds
- 1 Cup Macadamia Nuts
- 1 Cup Pecan Nuts
- 1/2 Cup Cacao Powder raw
- 1/4 Cup Coconut Oil organic, cold pressed
- 1 Cup Coconut Shavings

Preheat oven to 160 degrees C

In a large bowl, place all the nuts except the coconut shavings

Add the Cacao Powder and the Coconut Oil to the nuts and mix with a wooden spoon until all the nuts are coated and the mixture becomes 'damp'

Pour the mixture onto a lined baking tray and place in the oven for 15 minutes

Remove from the oven and toss the nuts. Add the coconut shavings to the mixture and place in the oven for another 10 minutes.

Keep an eye on the granola to make sure the coconut shavings don't go to brown or burn, as they can become bitter

If you prefer a bit of sweetness, you can add 2 tablespoons of honey to the mixture at the coconut oil stage, but you may have to reduce your baking time, in case they caramelise too quickly.
Serve with Coconut Yogurt, Kefir or on top of a smoothie or smoothie bowl! The granola should be crunchy and delicious with a hint of chocolate!
