The Asian Cucumber Salad with a tangy, sweet dressing is so fresh and delicious.  You can have it with any meal or even as a snack on it’s own.  You can especially serve this at your BBQ/Braai.  The light, refreshing flavours and coolness of this salad is great on a hot day!

A good tip, is to make sure you slice the cucumbers nice and thin and you can adjust the flavours in the dressing by adding more vinegar or Mirin to the dressing.  I like to finish this Asian Cucumber Salad off with a sesame seed and seaweed seasoning that I found in my local grocery store.  If you can’t find it you can add toasted sesame seeds to finish off the salad.  You can add some crispy seaweed too which will improve the nutritional content of this salad.

Asian Cucumber Salad

A refreshing, tangy salad that can be served with any meal.

Ingredients
  • 4 small Lebanese Cucumbers thinly sliced
  • OR 1 large Continental Cucumber thinly sliced
  • 3 tbsp Rice Vinegar (or Red Wine Vinegar)
  • 1 tbsp Mirin (sweet rice wine)
  • 1 knob Grated Ginger optional
Instructions
  1. Slice the cucumbers and place them in a bowl

  2. Mix the rest of the ingredients together and pour over the salad

  3. Combine the dressing with the salad

  4. Top the salad with sesame seeds and seaweed
