Paleo Raspberry Cupcakes

Paleo Raspberry Cupcakes


  • 1/2 Cup Butter Melted
  • 1/4 Cup Honey Raw
  • 2 Tsp Vanilla Extract or powder
  • 2 Eggs
  • 1 Cup Coconut Milk Full fat or Canned
  • 1 Tbsp Apple Cider Vinegar With mother
  • 1/2 Cup Coconut Yogurt
  • 1 Cup Cassava Flour Organic
  • 1 Cup Almond meal
  • 1/4 Cup Coconut Flour
  • 2 Tsp Baking Powder Aluminium free
  • 1/2 Tsp Baking Soda/Bicarb
  • 1/4 Tsp Salt Sea or Himalayan Pink
  • 1/2 Cup Raspberry Chia Jam


  1. Pre-heat oven to 180 deg C

  2. Place the melted butter, honey, vanilla and eggs in the thermomix or mixing bowl and mix for 1 minute on speed 4

  3. Add the milk, yogurt, flours, baking powder, bicarb and salt and blend to combine on speed 4 for 10 seconds

  4. Pour the raspberry chia jam into the cupcake mixture and swirl through (don’t mix in)

  5. Line a cupcake tin with cupcake papers and scoop a large dessert spoon of mixture into each cupcake holder.

  6. Should make around 12 cupcakes

  7. Place in the oven and bake for 25 minutes

  8. Once cooled, spoon the remaining raspberry chia jam a teaspoon at a time on top of the cupcakes and serve.
