Gluten Free Almond Coconut Bread

A delicious, dense and filling bread which is an amazing replacement for bread or sourdough. Completely Gluten Free and Dairy Free and perfect for a keto or paleo lifestyle. You can also halve this recipe, especially if you’re making it for the first time, to see if you like it.


  • 3 Cups Almond Meal With or without skin
  • 4 Tbsp Coconut Flour
  • 1/2 Cup Golden Flax Seeds
  • 1/2 Tsp Salt Himalayan pink or Celtic
  • 1 Tsp Baking Powder aluminium free
  • 1 Tbsp Bicarbonate of Soda
  • 2 Tbsp Xylitol or Swerve
  • 10 Med Eggs free range
  • 1/2 Cup Coconut Oil Organic, cold pressed
  • 2 Tbsp Apple Cider Vinegar With the mother


  1. Preheat the oven to 180 deg C

  2. Grease 2 small loaf tins well, or use silicone pans. You can also use 1 large loaf tin, or halve the recipe to make 1 small loaf

  3. Add all the dry ingredients to a food processor or in a thermomix bowl and whiz up until the flax seeds are ground

  4. Add the eggs, oil, xylitol and vinegar and pulse until a batter is formed

  5. Pour into the loaf tins and bake in the oven for 45-50 minutes. If the loaf isn’t cooked through, place in the oven for a further 5 minutes and check if done with a skewer

  6. Keep the bread in the fridge and eat within 5 days

  7. Cut bread into slices and freeze individually with a piece of baking paper in between to prevent the slices from sticking together.
